How We Put an ‘e’ in Whiskey
Have you ever wondered how whiskey came about? It has roots that go a long way into the past, and in this book, the author tells us how the various discoveries came together – first of all to obtain alcohol from wine, but in Ireland, where grapes do not grow, from ale. The monks who first carried out this experiment wanted alcohol for medical purposes because the monks in those days were also the physicians.Inevitably, the alcohol was tasted, and though at that time it must have been harsh in flavour, the feeling of well-being and warmth it created could not be missed. At first, it was flavoured with spices, notably saffron, which gave it a beautiful yellow/orange colour. Later it was discovered that storage in an oak cask not only produced the amber colour of whiskey today but did wonderful things to the taste. From then onwards, all additions other than water to adjust the alcoholic strength and some caramel to standardise colouring were prohibited by law.Whiskey distilleries were recognised by their chimneys indicating their voracious use of fossil fuels, but today distilleries are being converted to be 100% fossil-fuel-free and still produce the same beautiful amber liquid.

Dishes with Strange Names
British and Irish cuisine, rich in tradition and flavour, has faced challenges in adapting to the modern world. Renowned for its hearty ingredients and lengthy cooking times, this style of cooking often clashes with today’s fast-paced lifestyle, where time is precious and health consciousness prevails. Moreover, these cuisines are known for their quirky and sometimes whimsical dish names.
This cookbook celebrates the unique and oddly named dishes of British and Irish fare, offering just under 200 recipes for culinary exploration. Each recipe is preceded by a story delving into the dish’s history and distinct features. While some dishes remain widely recognized and cherished classics, like ‘the full English,’ ‘colcannon,’ ‘toad in the hole,’ and ‘bubble and squeak,’ others are regional favourites, such as ‘scouse’ in Merseyside and ‘parmo’ in the North East. There are also lesser-known, rarely eaten delicacies like ‘apple hat’ and ‘collier's foot.’
For those intrigued by the misleading, such as ‘squab pie’ (made with lamb, not pigeon) or ‘Glamorgan sausages’ (meatless, cheese-based sausages), this book is a treasure trove of culinary surprises. And for the more adventurous, how about trying ‘toenail pudding’ or a slice of ‘fly cemetery’? This book promises to pique your curiosity and introduce you to the charming eccentricities of British and Irish cooking.

Recipes from My Travels
Paul James has written this book based on his cultural and culinary travels.
The reason why Cornwall is included in the title is based on a long-standing folklore distancing Cornwall from the rest of England. Recipes in this book are based on personal life experiences the author has tried to encapsulate in his writing.
Paul reminisces funny and heart-warming stories along the way that his viewers can relate to.
